I am preparing a vegetarian dinner tonight. The main dish will be a "gourmet" mac & cheese dish with fresh herbs, pine nuts and pecorino cheese. I need a quick and easy vegetable side dish that would go well with the pasta. No salads. Any ideas?
- steamed baby carrots in a light honey-glaze.
- wilted spinach with a garlic oil. (i don’t consider this salad but some might)
- steamed broccoli with a little butter.
- sauteed zucchini with olive oil and a little minced garlic.
- fresh tomato wedges with salt and fresh-cracked pepper with an olive oil drizzle.
- grilled asparagus always looks nice as a side dish. lightly salted.
