This is for our burger place. It is mainly for collage students.
We are very professional, in fact we are working with very famous chefs, using the best meat and fresh sauces etc.
Sadly, our logo says nothing about a gourmet. Plus, we are in the collage student area now, and I think they might like it. But, what will happen if we open up somewhat more luxurious and adult place? Do you think it will bother them?

I like #3 for a college audience. It is a really memorable and fun logo.
The logos are similar enough that if your restaurant opens a more upscale location in the future you may be able to use the more refined version of the logo for the upscale place and the other logo for the college location.

Can Better Than Bouillon Beef be used as an alternative to traditional demi-glace? Any alterations needed?

Just moved to a new area, so we don’t know the gourmet stores around here. Plus, I’m short on time, so I can’t order it online. Help!

I’m not familiar with the Better Than Beef brand, but I know that if you’re using bouillon, it’s usually made from a broth, not a stock (stocks are always made from bones).

Demiglace (traditionally) is a reduction of a brown stock, and since stocks contain gelatin (from the bones), omitting it will have an effect on the consistency and "mouth feel" of the finished dish. But the flavor shouldn’t be affected too much.

I would suggest reconstituting the bouillon you have (water alone would be OK, but half water, half wine would be better). Then simmer it in a saucepan and let it reduce by at least half. That will be a closer approximation of actual demiglace…without having to go shopping.
